After recovering from an eating disorder, during which it was difficult to find affordable care, Courtney Darsa desperately wanted to provide affordable care for individuals suffering from eating disorders. Turning her struggle into triumph and gaining a Bachelor’s degree in Dietetics and a Master’s Degree in Nutrition, Nourishing NY was born.

“Live for the journey, not the destination.”

After recovering and healing from my own eating disorder, I realized that helping individuals heal from their relationship with food and body was where my passion lied.  Having a safe place to go to heal from your disordered relationship with food is the foundation of my work.  Affordable and accessible care is what the practice is rooted in, everyone deserves a chance to reach full recovery and peace within themselves.

In my work with clients, it is important for me to meet you where you’re at, as well as guide you to a place of true happiness and balance in your life.  Everyone’s journey towards recovery looks different, which is why care is individualized for each client.  In our work together, we will explore how your relationship with food and body impacts your day to day life and how we can create a neutral or positive environment in which you are thriving.

Courtney’s specialities: Working with clients from all walks of life who are struggling with a diagnosed eating disorder or anyone looking to develop a better relationship with food/body, working with eating disorder clients transitioning or stepping up to a higher level of care, intuitive eating, weight inclusive medical nutrition therapy

“Self love, not always easy, but necessary”

Hi, I'm Alexa Nichols! Growing up, I always envisioned myself becoming a journalist. In my late teenage years I began to meet with a dietitian of my own to help heal my unhealthy relationship with food. It was then that I was introduced to the world of dietetics and immediately fell in love with this approach to gentle nutrition. I was shown the nourishing benefits of food for the body as well as the mind and soul. As a practitioner, I take an individualistic approach and aim to move through the healing process at a pace that is comfortable for the client. I always encourage clients to celebrate the small 'wins' and remind them that the work they are doing in recovery is not easy. We will work together on challenging food rules and fear foods that may be keeping you from building that positive relationship with food. It is my mission to support those who feel they are falling out of love with themselves, their body, and the role that food plays in their life.

Alexa's specialties: Working with teens and young adults, those with active eating disorders, transitioning from eating disorders, higher level of care, and chronic dieters.

Alexa as a human: I am originally from Cherry Hill, NJ, a town right outside of the Philadelphia area. I currently live in Brooklyn, NY but still remain a huge Philly sports fan. In my free time I practice joyful movement at my nearby yoga studio or jamming out to Cody Rigsby on my Peleton bike. I am both an avid reader and a reality TV fanatic. On the weekends you can find me on the turf at Domino Park or sipping a vanilla iced latte at a neighborhood coffee shop.

“Be where you are at, not where you think you should be”

We are often so focused on the outcome of our work that we have trouble being present in the moment. I meet my clients where they are at in their journey, allowing for a greater focus on the now.  Emphasizing progress and not perfection, I encourage my clients to let go of the idea that anything in life, especially regarding food, can ever be truly perfect.

In Mia’s Work with Clients: When working with my clients, I create a welcoming environment free of judgment for them to share their greatest struggles. Together, we set achievable goals that both challenge their eating disorder/disordered eating habits, while also creating an opportunity for progress in their journey. Bringing concepts of yoga into my work allows for the ability to cultivate mindfulness and greater interoceptive awareness, which is so easily lost in the setting of dieting and restrictive/binging habits.

Mia’s Specialties: I have experience working with adolescents and adults that have diagnosed eating disorders, such as anorexia, bulimia, and EDNOS, as well as chronic dieters that have a desire to re-establish regular eating patterns. In addition, I work with a variety of GI issues, PCOS, and mental health diagnoses, such as Borderline Personality Disorder, Bipolar Disorder, Depression, and Anxiety. I take a weight-neutral approach through disease and nutrition management.

Mia as a human: When I am not at work, you can find me practicing or teaching yoga. I also enjoy trying new restaurants and recipes, as food is a very important and enjoyable part of my life! I value my relationships with others and the people in my life, and on the weekends, I spend a lot of time with friends and family.

“Little by little, a little becomes a lot.”

Oftentimes, taking things day-by-day or even moment-by-moment is one of the best things an individual can do, especially when the healing work feels overwhelming. Since progress looks and feels different for everyone, and it isn’t usually linear, I find it so important to remind my clients to be proud of how far they’ve come.

Together, we will explore your relationship with food, movement, and your body, as well as challenge any unhelpful or limiting food beliefs. We will also create goals that are unique and individual to your needs, so that you are able to find peace and joy in eating. Encouraging my clients to give themselves grace and self-compassion throughout this process, especially as we navigate struggles and difficult moments, is also extremely important. It is with non-judgement, curiosity, and compassion that I work to cultivate a space for clients that feels safe and affirming. I will always provide unwavering support, and help you to reconnect and find your inner trust within your body.

Jenny’s Specialities: Using a weight-neutral and HAES-aligned approach, I have experience working with eating disorders, intuitive eating, ARFID, PCOS, the LGBTQ+ population, and adolescents and adults. I also work with individuals that are hoping to explore and heal their relationship with food, body, or movement.

Jenny as a human: When I’m not working, my favorite place to be is on the water (I live upstate in theThousand Islands!), or spending time with my family and friends. I also love getting creative in the kitchen, hosting game nights, and spending quality time hiking with my dog in the Adirondacks!

“Progress, not perfection”

This quote has been pinned on my laptop homepage for as long as I can remember. Having been on my own mental health journey, I am passionate about the role nutrition plays in overall well being. This allows me to take a compassionate and non-judgmental approach, promoting being kind and patient with yourself, allowing for mistakes along the way and appreciation of a non-linear journey.

My love for nutrition started at an early age, as my beloved grandmother, Mimi, taught me how to cook our family recipes. Having been a dietitian herself, she also fostered my love for helping people using food. After studying nutrition and working in a hospital, I quickly learned that my passion was in a weight neutral and individualized approach. Together we can work towards improving relationships with food and healing from the inside out.

Madi’s specialties: I specialize in using a weight neutral, compassionate and non-judgemental approach. Working with intuitive eating, medical nutrition therapy, disordered eating and diagnosed eating disorders with a focus on mental health and improving the relationship with food and self.

Madi as a human: I am from Brookeville, Maryland, just about halfway between Washington, DC and Baltimore. I have also lived in Pennsylvania and Virginia for school, and recently made the move to Hoboken, NJ. In my free time you can find me reading, knitting, painting, or making jewelry for my small business. I love yoga and going for long walks. I am always cooking or baking for my friends and family.

Professional background & credentials:

  • Registered Dietitian Nutritionist

  • Certified Dietitian Nutritionist

  • Licensed Dietitian Nutritionist

  • Bachelor’s degree in Dietetics from James Madison University

“Self-care is never selfish.”

Hi, I’m Christina! After healing from my own disordered relationship with food, I realized I wanted to become a dietitian to help others recover from their own eating disorders. Self-care comes in many forms, one of them being nourishment. Adequately nourishing our bodies with nutritious and delicious food is a form of self-care.

In Christina’s Work with Clients: I approach client-centered nutrition care through a weight-inclusive lens and promote food flexibility. I am a firm believer in the fact that food is so much more than just nutrition. In any recovery journey, whether from an eating disorder or chronic dieting, I will help you identify your food values and what food means to you. With that, we can create realistic and achievable goals to promote a healthful relationship with food and body.

Christina’s Specialties: Working with adolescents and adults with all diagnosed eating disorders, transitions to and from higher levels of care, chronic dieters, intuitive eating, and anyone who is looking to heal their relationship with food and body.

Christina as a Human: I was born and raised on Long Island. My favorite hobby is hiking in the mountains especially during the fall season! My favorite hikes so far have been in Maine and Arizona. I love to travel, listen to new music, practice yoga, and enjoy the outdoors in any way I can. On the weekends you will likely find me enjoying a cup of coffee, exploring LI, and spending time with friends and family.

“Authenticity is everything”

I have a background in cooking professionally and teaching cooking, which allows me to bring the knowledge of a chef to the role of a dietitian to provide a more comprehensive understanding of the complexity of food.

I advocate for an anti-oppressive lens and embrace intersectionality when listening to the lived experiences of others. I am dedicated and committed to supporting any individual, regardless of their background or the identities they carry.

Ethan’s Specialties: I specialize in the treatment of eating disorders, disordered eating and co-occurring medical conditions that result from these illnesses. My approach to nutritional counseling is centered around a weight-neutral, Health at Every Size (HAES™) lens, which encompasses a holistic view of health that goes beyond the number on the scale. I believe in fostering an environment where individuals can embrace self-acceptance and compassion for their bodies. By shifting the focus away from weight and placing emphasis on trauma-informed, client-centered care, I aim to empower individuals to develop a nurturing relationship with food and their bodies.

“Believe you can and you’re halfway there”

Sometimes the hardest part of overcoming a challenge is the confidence we have in ourselves. Belief and positive self-talk are impactful tools for achieving goals and working through obstacles. While this isn’t always easy, or natural, having a strong support team to cheer you on can make believing in yourself a bit easier.

I provide a supportive, empowering, and non-judgemental space for my clients to feel safe to work through their challenges. I use a personalized, science-based approach and tailor nutrition plans to my clients’ needs and preferences– all through a non-diet, weight-neutral lens. Together, we’ll dive deeper into your relationship to food and body image, working towards intuitive eating and balanced nutrition.

Rose’s Specialties: I have experience working with young adults and adults with disordered eating, diagnosed eating disorders (anorexia nervosa, ARFID, and binge eating disorder), and gastrointestinal conditions such as irritable bowel syndrome and inflammatory bowel disease.

Rose as a Human: I grew up in Los Angeles and moved to New York to pursue my undergraduate degree at NYU. When I’m not working with clients you can find me trying a new restaurant in NYC, taking a barre or yoga class, or walking my dog, Blue, in Central Park.
